Just because I don’t eat a lot of bread doesn’t mean I don’t eat sandwiches. I love them! While at an airport and looking for something wholesome-ish to eat, I found a smoked turkey sandwich with green apple and blue cheese. That was my inspiration for these incredibly simple sandwiches that are shockingly delish!

Five minutes and you’ve got a clever sandwich substitute! I mean, does it get any easier? These sandwiches are a great lunch for one, make a great snack, and would be super cute served at a baby or bridal shower.
