Forking EPIC Meatballs

These epic meatballs combine 3 different kinds of ground meat with a ton of fresh garlic, fresh Italian parsley, and sharp Parmesan cheese to make the most decadent meatballs I’ve ever tasted. The best part is that they are gluten free!! I tried several GF different ways to make these, and they were good but not EPIC. Then I found the secret ingredient!

Ingredients
  • 1 pound ground beef
  • 1 pound ground pork
  • 1 pound ground Italian sausage
  • 1 6 oz wedge Parmesan cheese
  • 1 6 oz bag gluten free pretzels I really like the Snyder’s brand
  • 1 cup ricotta cheese
  • 1 bulb garlic I used 3
  • 4 fresh eggs
  • 1 bunch fresh Italian parsley
  • 2 tablespoons Italian herbs
  • 1 tablespoon sea salt
Servings: like enough for several meals or enough to feed ALL THE CREW
Ingredients
  • 1 pound ground beef
  • 1 pound ground pork
  • 1 pound ground Italian sausage

  • 1 6 oz bag gluten free pretzels I really like the Snyder’s brand

  • 2 tablespoons Italian herbs
  • 1 tablespoon sea salt
Servings: like enough for several meals or enough to feed ALL THE CREW
Instructions
  1. Put ground meat in a large bowl and mix well with your hands.
  2. In Vitamix or food processor make breadcrumbs out of the pretzels- add to the meat mixture
  3. Grate Parmesan cheese into meat mixture
  4. In Vitamix or food processor add the eggs, ricotta, fresh parsley, garlic, salt, and italian seasonings.
  5. Mix everything together really well with your hands
  6. Roll into 2 inch balls
  7. Bake at 400 degrees for 20- 25 minutes- rotating pans at halfway
