Pineapple Pico de Gallo

Super easy, full of flavor, and ready in minutes! This Pico de Gallo is good to eat as a dip, a salad, or as a topping for your favorite meat. Pick up a pineapple next time you are at the store and give this deliciously simple recipe a spin.

I had this while on our last cruise and it was love at first bite. The sweetness of the pineapple combined with the spicy fresh jalapeño makes this a Forking EPIC pico recipe.

Ingredients
  • 1/2 fresh pineapple cubed
  • 1 small Vidalia onion grated
  • 1-2 fresh jalapeños diced
  • 1 large ripe tomato diced
  • 4 fresh green onions finely chopped
  • 1 large lime juiced
  • 4 clove cgarlic grated
  • 1/2 bunch bunch cilantro leaves chopped
  • 1 teaspoon sea salt

Ingredients
  • 1/2 fresh pineapple cubed

Instructions
  1. Wash & Cut vegetables
  2. Add vegetables to bowl as they are ready
  3. Squeeze lime over ingredients
  4. Sprinkle with sea salt
  5. Stir & allow to rest for 10 minutes
  6. Stir again before serving
