BOMB Broccoli Salad

A new spin on an old traditional recipe. The goat cheese and balsamic is what this dish has always been missing! This recipe is a winner every time I take it to a gathering. It is super easy and is perfect to make ahead. It is a sure thing crowd pleaser that will impress even the pickiest of eaters in your family. Ingredients
  • 6 cups broccoli florets cut into small pieces
  • 1 bulb of garlic minced
  • 1 large red onion diced
  • 2 Granny Smith apples diced
  • 1 1/2 cups walnut halves
  • 8 oz goat cheese crumbled
  • 2 cups crispy bacon crumbled
  • 4 tablespoons balsamic vinegar
  • 2 tablespoons sea salt
  • 2 tablespoons coconut oil

Ingredients

Instructions
  1. Spread broccoli florets w/ crushed garlic & walnuts in a single layer on a cookie sheet. Sprinkle with salt and toss with coconut oil. Roast for 20 mins @ 350 degrees stirring half way. Add them to the goat cheese mixture while warm
  2. In a large bowl mix goat cheese and balsamic vinegar
  3. Add roasted broccoli and walnuts to goat cheese mixture.
  4. Chop apple, onion, and bacon and mix with cheese mixture.
  5. Serve right away or refrigerate overnight.

Here is how I make my Forking EPIC Bomb Broccoli Salad…

Cut broccoli in small florets, mince garlic, chop onions & apples

Mix goat cheese and balsamic vinegar in a large bowl. I just mix mine in a large plastic container with a lid so I can take it with me easily.

Spread broccoli florets w/ crushed garlic & walnuts in a single layer on a cookie sheet. Sprinkle with salt and toss with coconut oil. Roast for 20 mins @ 350 degrees stirring half way. Add them to the goat cheese mixture while warm

Mix in apples, red onion, & bacon

Mix well & Enjoy!
