Fruit & Walnut Chicken Salad

I love to make this chicken salad for car trips. We love this chicken salad so much that I always make extra chicken just so we can have this salad. The combo of sweet fruit and savory chicken makes this a surprising treat!

Ingredients
  • 4 cups cooked chicken cubed
  • 2 cups green apple diced
  • 2 cups red grapes halved or quartered
  • 2 cups shredded sweet potato
  • 1 cup roasted walnuts- roughly chopped
  • 1 cup celery chopped
  • 1 cup cooked bacon crumbled
  • 1/2 to 1 cup Greek yogurt
  • 1 lemon juiced
  • 1 - 2 tablespoons garlic powder
  • Salt & pepper to taste

  • 1 cup cooked bacon crumbled
  • 1/2 to 1 cup Greek yogurt
  • 1 lemon juiced
  • 1 - 2 tablespoons garlic powder
  • Salt & pepper to taste
Servings: People
Instructions
  1. Chop all ingredients
  2. Place everything in a large bowl
  3. Squeeze lemon on top & toss to coat
  4. Mix in Greek yogurt
  5. Season to taste
  6. Refrigerate leftovers

Here is how to make this super simple salad:

This is a great way to use leftover chicken. In this recipe I used leftover chicken from my Beer Can Chicken recipe. I always make 2 chickens just so I can make this salad!

Chop all your ingredients & get creative. Want to use pears instead of apples? Add em! Like onions? Throw them into the mix! Don’t have walnuts but you have almonds? You are on a roll! Dried fruit is also a great add in! You really can’t go wrong

This is a great recipe to pack for lunch & for car trips. I like to eat mine on my homemade Sweet Potato Chips & the hubs likes his on my  Gluten Free Butter Rolls.
