“Peanut Butter” Banana Blondies

A snack that you won’t have to regret? Yes, please! These Blondies (your favorite Brownies’ fun cousin) combine banana and cashews to make that epic peanut butter banana flavor that is everyone’s favorite

Has there ever been a better combo than Peanut Butter & Banana? I love it but my husband can’t eat peanuts. The canshews in this recipes are a great replacement for the peanuts. This recipe doesn’t have any added sugar or gluten either! It is the ultimate fake out because this tastes so delish no one will know that it isn’t loaded with the “bad stuff”.

Ingredients
  • Banana Layer
  • 2 ripe bananas mashed (apx 1 cup)
  • 4 large eggs
  • 1/2 cup honey
  • 1/2 cup coconut oil plus more for oiling the pan
  • 1 lemon juices
  • 1 tablespoon vanilla
  • 3/4 cup gluten free baking mix
  • 1/2 cup powdered stevia
  • 1/2 teaspoon sea salt
  • 6 oz freeze dried crushed
  • “Peanut Butter” Layer
  • 1 tablespoon sesame oil
  • 2 tablespoons honey
  • 1 cup roasted salted cashews roasted peanuts can be used as well
  • 2 tablespoons nutritional yeast granulated Parmesan cheese can be used as well
  • 1 tablespoon vanilla
  • 1 tablespoon sesame oil

Instructions
  1. Preheat oven to 350 degrees. Heavily oil 13x9 baking pan and set aside
  2. Melt coconut oil in large mixing bowl
  3. Mix honey, vanilla, lemon juice, and eggs with melted & slightly cooled coconut oil
  4. Add baking mix & sea salt and mix well
  5. Batter will be lumpy. Allow to rest for 5 minutes. Mix again
  6. Stir in crushed freeze dried bananas
  7. Put half the batter into greased baking pan
  8. Prepare the peanut butter filling- Mix all ingredients to Vitamix or food processor until smooth
  9. Add ½ of the filling in two thick horizontal streams, gently swirl banana batter & filling back and forth to make a marbled design
  10. Add last of banana batter, smooth to edges of pan
  11. Repeat step 9. Use a butter knife to drag thru all layers batter. First make horizontal passes every 2-3 inches and then repeat this process making vertical passes. The design will look swirled and marbled
  12. Bake for 30 minutes or until middle is set.
  13. Allow to cool for 15 minutes before cutting into squares for serving

“Peanut Butter” Banana Blondies

Here is how to make these amazing “Peanut Butter” Banana Blondies…

Gather all of your ingredients, preheat oven, and heavily oil baking pan with coconut oil.

Mix wet ingredients for banana layer

Add baking mix and salt and mix.

Stir in mashed banana. Batter will be lumpy. Allow to rest for 5 minutes

Stir in crushed freeze dried bananas. Mix until smooth

Spread half of the banana mixture in the prepared baking dish and sit aside while you prepare the peanut butter mixture

Add all ingredients to Vitamix or food processor

Process until smooth

Add ½ of the filling in two thick horizontal streams, gently swirl banana batter & filling back and forth to make a marbled design

Add the last of the banana batter to the top, spreading to the edges

Repeat step 9. Use a butter knife to drag thru all layers batter. First make horizontal passes every 2-3 inches and then repeat this process making vertical passes. The design will look swirled and marbled

Bake until middle is set and allow to cool in pan for 15 minutes before cutting

Cut in squares before serving. Store in an airtight container for several days (if they last that long!)I like to freeze these and warm them for a minute for a snack that tastes freshly baked, fresh out of the oven.
